they do, in the original script when jake and grace are invited to hometree (i think it's after the big hunt, also not included in the film) they celebrate so while music is been played Neytiri tells jake he must dance. You can find the "Hunt Festival" scene on disc 2 if I remember correct. It's one of the 45 mins odd of deleted scenes and you can see the both the Na'vi getting drunk (drinking games) and dancing. Part of it is "motion capture" only and some is the template level (more basic cgi, no detailing).
