Pandora is a moon. The moon orbits Polyphemus. Polyphemus is a gas giant that is roughly the size of Jupiter. So then why doesn't Pandora get random moments of night time when the planet that it orbits capably blocks out the sunlight?

When reading about the star system via wikipedia, etc. it does describe the day/night cycle in which there is a period of night or twilight. This isn't however in anyway RANDOM though.

Yeah, but you'd expect the day and night shifts to be rather distorted comapared to an earthly perception of it.

I believe that it is just not explicitly addressed in the film because for the purpose of the 2 hour and 40 minute movie, but it might possibly be expanded upon in the following films.

Yep. I read somewhere that if Pandora had long periods (days) without light, the bioluminescence would keep everything working.

All the info about this is in the survival guide. Basically for the most part there is always light on Pandora, but there are times when it does get dark, pretty sure never completely, dont quite me on that though.
The long days of light cause Bioluminessence when it gets dark.
